Good eats and a good read.

I've been tinkering around with becoming a vegetarian for a while now. The key to being successful at this is finding good recipes that make you excited to experience this new diet. If you keep eating gross food, then you will dread the meals and are very likely to fail. So..... without further ado, I introduce you to:

Vegetarian Plantain Bake

Ingredients:
2 Plantains
1 Avocado
1 Can Black Beans
2 Cups Fresh Mushrooms
2 Cups Diced Fresh Tomatoes
2 Cups Diced Fresh Bell Peppers
1 Packet of Taco Seasoning
1 Cup Quinoa
Goat Cheese to sprinkle on top

Boil and cook plain quinoa in one dish. You will want to use 1 part quinoa and 2 parts water.
In a separate container mix together black beans, peppers, mushrooms, tomatoes and taco seasoning. Cook on medium for about 20 mins.
In another separate container cook the plantains as follows: Cut plantains in half width-wise and length-wise. Then cut them in half length-wise again. Put 2 tablespoons of butter in the pan, place the plantains in the pan and sprinkle with sugar. Place the lid on top and let cook until brown.

Layer the quinoa, plantains, vegetable mix and goat cheese. Add avocado to taste. You can also put some sour cream on top to taste.

This dish is delicious and low in calories :) Enjoy!



After eating a good meal, curl up with this new book I just finished. Lukewarm, by Will Montgomery, is a Christian novel that tells of the in's and out's of love and God's push and pull to put us into or drag us out of certain relationships in our lives that aren't right for us. This book takes place in the Nashville/Cool Springs area, which makes it even more interesting!
